As a chef, my goal is to combine as appropriate pacific Oceania foods, Asian cooking practices, Baja California freshness, Mexican heritage and a multitude of other cultural culinary collections in order to create that perfect artistic and exotic cuisine experience for my guests.

EUROPEAN STYLE
Fun bagels
Cream cheese bagels stuffed with salmon logs, slices of red anions, capers and fresh mustard/ arugula sprouts.
French style Quiche
Hand made crust, stuffed with sauté mushrooms, bell peppers, apple wood bacon and gruyer cheese.( Quiche can be made to your favorite ingredients upon request ).
Open face toast
Hand made sourdough bread topped with avocado, sauted spinach and slow cooked eggs.
Omelets any style. Seasoned fruit plate
Organic yogurt, toasted pistachios, apple butter and bee pollen.
MEXICAN STYLE
Red Chilaquiles
Home made black beans, fried with chorizo, topped with local farmers cheese, and slices of avocado.
Huevos Rancheros
Fresh house made salsa, organic sunny side eggs, hand made tortillas with a side bowl of season fruit.
Mexican Enchiladas (Enfrijoladas)
Topped with fresh fried black beans sauce seasoned with chorizo, hand made tortillas stuffed with chicken, topped with farmers cheese, slice of avocado and sou cream.

Baja fish tacos
Fresh catch of the day, hand made tortillas, mix salsa, rustic Guacamole and cactus salad.
Shrimp Cocktail Veracruz Style
Cooked shrimp, marinated in veracruz style sauce, organic avocado, diced onions and fresh cilantro.
Spring rolls
Rice paper stuffed with local farmed shrimp, baby romaine lettuce, rice noodles, sliced fresh mango and avocado, with side of asian sauce for dipping.
Chicken Grabs
Organic local chicken breast, slice baby romaine house made cesar salad dressing, rolling into flower tortilla and finished on bbq.

AMERICAN STYLE
Sous vide pork chops
Slow cook pork chops, mix season grilled vegetables toasted on Haris- sa sauce finished with preserve Meyer lemons powder.
Chicken Roulette
Chicken thigh stuffed with marinated pork sausage, marinated with a rubbed preserve of sweet chili paste, roasted onions, and marinated bell peppers with tatziki sauce.
New York Grilled Steak
Grill steak with tahini sauce, roasted cauliflower marinated in mix of Middle East seeds.
MEXICAN STYLE
Cochinita pibil ( Rosted Pork)
Slow cooke roasted pork shoulder, marinated in achiote sauce, guaca- mole, pickle red onions and fresh hand mede tortillas,
Red Pipian
Cooked pork ribs in sauce of toasted sesame seeds, cinnamon, confit garlic, dry chiles and toasted peanuts with Mexican rice.
Arrachera
Grilled flank steak, spring onions, roasted sweet corn, and red bell peppers, black beans, Mexican rice and mix of salsas, and hand made tortillas.

Try our all natural homemade ice creams. We change the flavors seasonally using all organic ingredients including sweet corn, passion fruit, coconut, Oaxacan chocolate, vanilla bean, mango, avocado, and mexican churro.
